Saturday morning pancakes are a regular tradition in our house and there is a constant battle between me and my wife as to who makes the best ones. The kids always side with me as a put more chocolate on them. Pancakes are always served oldest first, two each.
Here is our recipe:
600g plain flour
50g baking powder
2 teaspoons of bicarbonate of soda
1 teaspoon of salt
50g of castor sugar
Mix all the above well in a bowl, this will last you a while, so you only need a cupful to make 6 pancakes. So, take one cupful of the mixture and add 1 egg and a cup of milk. Mix well. This should give you a light pancake mixture.
Heat oil in pan and pour in the mixture. There you go, a perfect pancake.
Now the good bit, health nuts look away now.
Spread nutella over the pancake, roll up, put another(!!) layer of nutella on top and sprinkle with sugar and a squeeze of fresh orange.
